Eason Bison Steaks With Salt And Pepper
-1 1/2 pounds bison steak
-Salt and pepper to taste
-1 tablespoon olive oil
-1/4 cup balsamic vinegar
-2 cloves garlic, minced
-1 shallot, minced
-1/4 teaspoon dried thyme
-1/4 teaspoon dried rosemary
-1/4 teaspoon dried oregano
1. Preheat the oven to 400°F (200°C).
2. Sprinkle both sides of the steak with salt and pepper. Heat olive oil in a heavy skillet over high heat. Add steak, and cook for 1 to 2 minutes per side, or until browned.
3. In a small bowl, whisk together balsamic vinegar, garlic, shallot, thyme, rosemary, and oregano. Pour over the steak in the skillet.
4. Transfer the skillet to the oven, and roast for 10 minutes for rare meat, or until the desired doneness is reached. Remove steak from the skillet, and let rest for 5 to 10 minutes before slicing into thin strips. Serve with the pan sear sauce.
